Guatemala
was outstandingly represented by 2006 National Champion, Noé Castro
Cacao. The contest, that annually gathers professionals in
coffee brewing from around the world, counted a total of 45
participants on its 8th edition.
During his 15-minute performance,
Noé prepared 12 coffee drinks, using a special blend
made with 100% national beans. Four sensory judges evaluated,
in flavor and appearance, his four espressos, four capuccinos
and four of his signature drink named Kakaw; and two technical
judges assessed his preparation procedures.
“Participating in the WBC represented
a great opportunity for me to share with international experts,
learn and show all that Guatemala has to offer,”
Noé concluded. 
About Kakaw
Kakaw is a drink created by Noé and
inspired in cacao seeds, due to their historical importance
for Guatemalan Mayas.
The beverage is a fusion of espresso
and mascarpone cheese, spiced with pepper, anise, cinnamon
and clove, qualified with cacao, ground according to traditional
methods from the Cobán region in our country.
Cobán is located about 130
miles away from Guatemala City. It is a region widely
known for its unique culture and excellent coffee, and it is
also the place where Noé was born. |
